One evening a month we close Shin Izakaya to the public and open a Japanese brewery instead. A handful of sakés, the kitchen matched to them, thirty people around the counter. Everyone talks, nobody lectures.

How an evening goes

One brewery at a time

Each edition follows a single house, from the first pour to the last. We'd rather spend a night with one brewery than skim ten labels.

Someone from Japan

A brewer or someone from the house makes the trip, with our sommelier alongside to translate and pick up the thread.

The kitchen, matched

Shin's signature dishes are reworked course by course to answer the sakés. Served to share, izakaya style.

Not a masterclass

Around the counter: sommeliers, restaurant owners, sake professionals, and people who know nothing at all and came anyway. Ask the obvious questions. You're allowed to dislike something. Serious about what's in the glass, never about ourselves.

La princesse chrysanthème — Kikuhime 菊姫

Hakusan, Ishikawa · fondée v. 1570 · 15 juin 2026

One of the oldest houses in Japan. It polishes its own rice, which is rare, and barely uses charcoal filtering: its yamahai keep the walnut, the grain, the caramel. The evening opened on a saké by Naohiko Noguchi, the man they call the god of sake, who learned his craft in this very brewery.

Seats go fast and there are thirty of them. Leave your email and you'll hear the date and the guest brewery before anyone else. One message per edition, nothing more.

The Sake Club started with a conversation with Midorinoshima, who select and import over two hundred sakés from Japanese craft breweries. They're the reason those breweries make the trip to rue des Ciseaux.

Tsukizi is temporarily closed.

A small fire has forced us to close until further notice. It was brought under control within minutes, no one was hurt, and the rest of the restaurant is untouched.

Shin Izakaya is just a few doors away, on rue des Ciseaux.

And if it was sushi you came for, the Tsukizi team hasn't gone home: you'll find them behind the counter at Saku, on rue du Mont-Thabor.
